Scallion Miso Butter

This is a favorite recipe for a compound butter in PPS Cooks+Gardens afterschool class. Skills learned: Chopping, blending. Our favorite topper for baked sweet potatoes.

Ingredients

  • 6 Tablespoons softened butter
  • 1 Tablespoon white miso
  • 4 finely chopped scallions

Directions

  1. Place all ingredients in a bowl
  2. Mix together until well incorporated
  3. Place in a ramekin or shape into a log and wrap well in wax paper.
