Scallion Tabbouleh

This is a favorite recipe in PPS Cooks+Gardens afterschool class. Skills learned: Chopping, seasoning.

Ingredients

  • 2 cups coarse bulgur
  • 1 1/2 cups boiling water
  • 2 bunches scallions, finely chopped
  • 1 large bunch flat-leaf parsley, finely chopped
  • 1 large bunch mint, finely chopped
  • freshly grated zest and juice of 1 lemon
  • 2 Tablespoons olive oil
  • 2 Teaspoons ground sumac
  • kosher salt and freshly ground pepper

Directions

  1. Place the bulgur in a bowl then pour 1 1/2 cups boiling water over it.
  2. Cover the bowl and let sit for about 20 minutes.
  3. Drain any water that remains in the bowl.
  4. Spread the bulgur onto a flat surface to cool.
  5. transfer bulgur to large bowl and add remaining ingredients.
  6. stir everything together.
  7. Taste and adjust the seasonings to your liking.
