Ingredients
- 2 cups coarse bulgur
- 1 1/2 cups boiling water
- 2 bunches scallions, finely chopped
- 1 large bunch flat-leaf parsley, finely chopped
- 1 large bunch mint, finely chopped
- freshly grated zest and juice of 1 lemon
- 2 Tablespoons olive oil
- 2 Teaspoons ground sumac
- kosher salt and freshly ground pepper
Directions
- Place the bulgur in a bowl then pour 1 1/2 cups boiling water over it.
- Cover the bowl and let sit for about 20 minutes.
- Drain any water that remains in the bowl.
- Spread the bulgur onto a flat surface to cool.
- transfer bulgur to large bowl and add remaining ingredients.
- stir everything together.
- Taste and adjust the seasonings to your liking.
